王星宇,博士,副教授,硕士生导师。2014年毕业于中国海洋大学食品科学与工程学院,获食品科学工学博士学位,于2015年11月入职陕西师范大学食品工程与营养科学学院。主要从事食品功能因子和植物源天然产物消化稳定性,靶向递送载体构建,及其营养调节作用的研究。目前已经发表SCI论文30余篇,其中第一和通讯作者23篇。同时为Journal of Agricultural and Food Chemistry, Journal of Nutritional Biochemistry, Journal of Functional Foods, Food Frontiers, Analytica Chimica Acta, Phytomedicine等国际主流SCI期刊担任审稿人。参与译著《食品分析实验指导》,副主编《食品安全检测技术》两本食品专业教材。主持国家自然科学基金青年项目1项、陕西省重点研发项目2项、中央高校基本科研业务基金2项、陕西阔成检测公司横向课题1项;参与国家自然科学基金面上项目,陕西省重点研发计划和陕西省林业厅项目等共7项;授权国家发明专利3项。(以上信息截止于2026年4月)

研究方向

1. 植物源miRNA的消化稳定产生的机制及其营养调节作用。Plant miRNAs, the mechanisms behind the resistance against food digestion and their nutritional regulatory effects in the cross-kingdom fashion.

2. 天然产物通过多靶点、多通路方式预防并缓解代谢退行性疾病的发病与发展。Prophylactic and therapeutic strategies against metabolic and degenerative diseases using natural products via multi-target and multi-pathway fashions.

3. 核酸和食源性大分子对功能因子的保护机理和高稳定性高吸收率纳米载体的构建。Molecular mechanisms behind the protective effects on bioactive compounds using nucleic acids and food-derived macromolecules and the construction of nano-scale vectors for specific delivery with high stability and bioavailability.
