杨兴斌男,汉族,陕西横山人,陕西师范大学食品工程与营养科学学院院长、三级教授、博士生导师。1997年获北京化工大学精细化工工学硕士学位,2004年获空军军医大学(原第四军医大学)医(药理)学博士学位。担任陕西省食品绿色加工与安全控制工程实验室主任,陕西省农产品贮藏加工风险评估实验室主任,陕西省食品科学与工程实验教学示范中心主任,教育部药用资源与天然药物化学重点实验室、西北濒危药材资源开发国家工程实验室学术带头人。先后获陕西省科技进步一等奖1项、二等奖2项和陕西高等学校科学技术一等奖2项,2011年获中国食品产业产学研创新发展杰出科研人才奖,2013年获陕西省职工优秀科技“创新人物”称号,2014年获“全国模范军队转业干部”称号及省部级劳动模范,2014年入选“陕西省中青年科技创新领军人才”,2016年获“三秦人才津贴”。

兼任SCI一区杂志《Food & Function》的顾问委员及SCI杂志《Current Proteomics》编辑、《Journal of Food & Nutritional Disorders》和《Journal of Food Processing & Technology》杂志主编及《食品科学》、《食品安全质量检测学报》、《农产品加工》、《陕西师范大学学报》等杂志编委。任陕西省食品科学技术学会副理事长、陕西省营养学会副理事长、中国农学会食物与营养专业委员会常务委员、中国农产品开发服务协会农产品加工业分会委员,马铃薯主食开发技术协作组理事会副理事长,中国猕猴桃产业技术创新战略联盟理事,国家农产品加工营养大数据创新战略联盟副理事长。

先后主持国家自然科学基金面上项目3项及国家重大科技专项等项目10余项,发表教学论文10余篇,并Antioxidants & Redox Signaling (IF 8.2), American Journal of Clinical Nutrition (IF 6.5), Free Radical Biology & Medicine (IF 5.7), Molecular Nutrition and Food Research, PLoS ONE, Journal of Agricultural and Food Chemistry, Food & Function, Food Chemistry等SCI杂志发表论文100余篇,论文被引用近2000次,论文H指数为27。

熟悉保健食品的申报注册工作,具备丰富的生物制品产、学、研一体化与产业战略发展管理经验。系统研究秦巴山区植物资源的功能糖与类黄酮的营养聚集化精深加工和营养调控分子机制,发掘水苏糖的地笋新资源。与企业合作,开发爽QQ牌水苏糖口香糖(企业标准Q/DSP 010-2007)、肠内美人牌水珍唯美食品水苏冲剂(国食健字G20040234)和德施普粉(国食健字G20080008)等系列功能食品(市场化商品),产生重要的经济与社会效益。同时,研究猕猴桃的采后气体射流冲击干燥和冷冻干燥技术及理论,开发猕猴桃的休闲食品;开发马铃薯主食化馒头与面条食品;并探究功能糖与多酚的分子交互作用机制,开发“益常顺”牌茶多酚复合益生元速溶茶和固体饮料、茯砖茶高值化健康产品及酵素功能食品;成功研制“水槽升降式”新一代豆芽机食品装备。目前,主要从事食品营养化加工、食品营养与安全检测和保健食品及特膳食品开发方面的研究工作。
