潘敏雄,男,博士,国立台湾大学教授,博士生导师,陕西师范大学客座教授。近年来主要致力于茶叶、柑橘果皮、蓝莓、姜黄、藻类等天然产物的化学预防特性及其影响机制方面的研究,在天然产物的抗发炎、抑制细胞增生、诱发癌细胞程式性死亡(细胞凋亡与自体吞噬)、抑制肿瘤形成与生长、抗肝纤维化与抗肥胖等研究中取得了突出成绩,为营养保健食品的功效评价及产品开发提供了坚实的理论基础和科学依据。近五年来以主持人和共同主持人身份主持国家级项目15项,授权发明专利6项,获得奖项多项,以第一和通讯作者身份在Mol. Nutr. Food Res. (IF= 4.909; Ranking=3/123, Food Science & technology)、J.Agri.Food Chem.和Food & Function等国际著名期刊上发表研究论文近70篇,受邀担任Journal of Food and Drug Analysis的副主编,并担任Molecular Nutrition and Food Research,Journal Agriculture and Food ChemistryFood Chemistry, Food Chemical and Toxicology, Food Science and Human Wellness,Journal of Functional Foods等国际期刊的评审专家。其科研能力和水平得到国际同行的认可,是食品科学领域具有国际影响力的高水平学者。
